Fabiola Cabeza de Baca Gilbert (1894–1991) was a pioneering New Mexican educator, author, and cultural preservationist whose work bridged traditional Hispanic and Native American culinary traditions with modern American life. Born in La Liendra, New Mexico, to a prominent Hispano family, she dedicated her career to teaching home economics and documenting the rich heritage of her region's cuisine. As a home extension agent for the New Mexico State University Cooperative Extension Service, Gilbert traveled extensively, sharing recipes and stories that celebrated the fusion of indigenous, Spanish, and Anglo influences. Her legacy endures through her efforts to empower rural communities, particularly women, by preserving authentic flavors and fostering cultural pride in the American Southwest.
